Healthy Breakfast – Sausage Egg Paleo Breakfast Sandwich

Looking for an easy-to-make breakfast sandwich? How about a recipe that is similar to what you’d find driving through the take-out at a well known fast food restaurant, but healthier? A combination of eggs, and sausage, this Sausage Egg Paleo Breakfast Sandwich is a great way to start your day – low carb, high protein, and quite tasty!

The one thing that makes this sandwich “different” when preparing it is you’ll need to have a set of biscuit cutters. Using biscuit cutters will help you cook the sausage and egg in the size you’ll need for the sandwich. If you don’t have biscuit cutters, a wide-mouth mason jar ring work, as does cleaned, used tuna cans.


2 tablespoons ghee, divided (plus more for greasing the biscuit cutters)
¼ pound bulk raw pork breakfast sausage)
2 large eggs)
Kosher salt)
Freshly ground black pepper)
¼ cup water)
1 heaping tablespoon guacamole (optional))


Take two stainless steel 3½-inch biscuit cutters, and grease the insides well with melted ghee (you can substitute butter for ghee if you can’t find ghee). Place one cutter on a plate and fill it with the sausage meat. Press the meat down to shape a sausage patty. Heat a skillet over medium heat and add a tablespoon of ghee. When the fat is shimmering, add the patty to the pan. Keep the mold on until the cooked patty shrinks away from the sides. Fry the sausage about 2 to 3 minutes on each side or until fully cooked.

Once the patty is cooked, remove it from the pan, and pop the patty onto a layer of paper towels to drain off any excess grease. Then, take a little more ghee, and re-grease the biscuit cutters.

Next, grab two small bowls and crack one egg into each, piercing the yolks, and mix lightly. Place your biscuit cutters back onto your skillet, and fill each biscuit cutter with the the egg from one bowl (two bowls – two biscuit cutters). Season the eggs with salt & pepper. Next, pour your 1/4 cup of water gently into the skillet, surrounding the biscuit cutters. Turn the heat down to low, and cover the pan for 3 minutes to cook the eggs. When cooked, pop the first egg onto a plate, top it with the sausage patty, then place the second egg on top of that. You can add a bit of guacamole on top of the sausage prior to placing the second egg on top of it for a bit of flavor and healthy fat!
